Hugely Drinkable, Light Bodied & Fresh
This bottle pairs fantastically with good company. A wonderfully moreish wine that is backed through being distinctly herbaceous due to slow fermentation in underground limestone caves. Herbaceous nose with eucalyptus, nettle and mint. Roasted fruit, red plum, savoury with some clove spice. Bright and fruit forward.
Due to the small yields of 2018, all the grapes were harvested at exactly the right time, making it a great vintage. Harvest also stops at 10am to retain freshness and acidity.
The wine is allowed serious time to take shape in the cellar. This, in turn, lets the wine develop serious character.
