Just an hour or two of skin contact. Some of the golden colour also comes from the Marsanne, which is less commonly grown on sandy soil in such hot weather. Delicate and fresh, yet robust with good weight and a waxy finish. Laurent says the salinity of the wine contributes to the body/tannic structure.
Slow fermentations in the underground limestone caves help give typicity across Laurent’s cuvees, with whites and reds sharing a distinct herbaceousness. Long elevagés are preferred, allowing time for the wines to develop character.
Tasting notes: Dried herbs, apricot, citrus peel, a little tannin.
