Domaine Luneau-Papin handpick all the grapes. A process which can traced back eight generations. Handpicking means these immensely experienced & eager eyes can pick out all the best fruit. Plus none of the damage & bruising from machine harvesting to worry about. Not to mention all of the insects & other organic matter that can provide a bitter flavour.
Spontaneous fermentation using only natural yeasts. Aged on lees for 6 months. Granite soils make for a wonderful minerality.
